The principle of operation of boiler convectomats is based on the formation of steam in a special container (boiler), which then enters the working chamber. Thus, scale does not accumulate inside the working chamber and does not come into contact with food. 

In injection steam convectomats, water is immediately sprayed onto the heating elements, instantly turning into steam. Injection-type steam convectors, unlike boiler ones, do not require time to warm up the water and are immediately ready for operation.
